The list is opened by Zakwas, which bakes original breads, plump ciabattas, brioches and buns with seasonal fruit which are worth getting up at dawn to buy.
A large selection of bread, the highest quality ingredients and local products are the hallmarks of this place. For the production of bread, they use only bio-eco certified flour from the Naturplon organic farm and natural leaven, and for baking yeast flour from the mill in Bardo near Września.
You will also eat here excellent breakfasts with a solid pile of bread in the lead role, “zero” eggs from happy hens from Manieczki, butter from a nearby dairy and goat cheese from a small, family farm near Poznań. Vegetables are also bought from local traders. As stated by Zakwas on his Facebook, “Most often at Mrs. Beatka” at Rynek Jeżycki.
The second address worth recommending is the byMac bakery opened only a few months ago, run by Michael, who knows everything about bread and willingly shares his extensive knowledge with other bread-lovers. There is no room for compromise. They bake bread here with the use of self-ground flour and only with real leaven.
It would be a sin not to mention Cindy and Koko. Both are insane, chubby yeast buns. The first is cinnamon, and the second has vanilla cream, hazelnuts and coconut flakes inside. Delicious!
To get to this small bakery, you have to go through a gate and go deeper into the tenement house – but don’t worry, the smell of fresh bread will show you the way.
Expect some amazing breads such as Lithuanian malt loaf with honey and coriander or Gluten-free buckwheat and millet! One hundred percent organic flour, no chemicals, improvers, no GMO, only sourdough (no yeast).
In addition to baked goods, you will also find a large selection of flours, hummus, oils, pickles, sugar-free preserves, and even bio ketchup and dumplings. We love the fact you can even read the composition of the selected loaf on a small piece of paper stuck to the bread.
4. Chleb Rafała
Rafał is passionate about home baking, so whether you prefer a crispy crust and cavernous holes in which butter melts, or a heavy 100% rye bread, there is something for everyone here!
Selected additions, excellent taste and unique atmosphere make this place unique. The menu is available in the featured Instagram Stories, and orders are placed in a private message.

Warm, fresh bread, rolls and challahs disappear at an alarming rate here, so it is worth going to Górna Wilda at dawn before everybody else wakes up! While you are there, be sure to check out the challah with orange peel. Absolutely delicious!
